Anna: Thanks, Tingting. I’m very excited.

安娜：谢谢你，婷婷。我特别期待。

I had never even heard of Hunan cuisine until you invited us.

在你邀请我们之前，我甚至从没听说过湘菜。

Lisa: But what kind of food is Hunan cuisine exactly?

莉萨：那湘菜到底是什么风味呢？

Is it spicy like Sichuan food?

它和川菜一样辣吗？

Tingting: It’s even spicier, Lisa!

婷婷：比川菜还要辣，莉萨！

But the flavour is somewhat different from Sichuan cuisine.

不过风味和川菜略有不同。

The heat in Sichuan cuisine comes from chillies and Sichuan peppercorns.

川菜的辣味来自辣椒和花椒。

Hunan cuisine is often hotter, and the heat usually comes from just chillies.

湘菜通常更辣，而且辣味单单来自辣椒。

Anna: But why do Hunan people prefer such spicy food?

安娜：那湖南人为什么偏爱这么辣的食物？

Tingting: Well, Hunan people will tell you that they like bold flavours because they are a bold people.

婷婷：湖南人会告诉你，他们喜爱浓烈的味道，因为他们性情豪爽。

But many Chinese people think that hot food helps them overcome the effects of rainy or wet weather,

但很多中国人认为辛辣食物有助于抵御阴雨潮湿天气带来的不适，

and it is often wet in Hunan as well as in other places in the south, such as Sichuan and Chongqing.

湖南气候常年潮湿，南方其他地区，像四川、重庆也是如此。

Lisa: So what shall we order?

莉萨：那我们要点些什么菜？

Tingting: I recommend the steamed fish head covered with chillies.

婷婷：我推荐剁椒鱼头。

I know fish head may sound strange, but the meat is quite tender and there are very few small bones, so everyone loves it.

我知道鱼头听起来有点特别，但肉质十分鲜嫩，细刺很少，所有人都爱吃。

Lisa: OK. And what’s this here: dry pot duck with golden buns?

莉萨：好的。这个菜是什么：干锅鸭配黄金馒头？

Tingting: It’s duck stir-fried with garlic, ginger, and black bean paste, and it has some bread with it.

婷婷：这是鸭肉搭配大蒜、生姜、豆豉爆炒，还配有一些馒头。

It’s quite good, but I suggest the bridge tofu instead, as it has a lighter taste.

味道很不错，但我更推荐过桥豆腐，口味清淡一些。

Lisa: Yes, let’s order that.

莉萨：好，那我们点这道。

Tingting: Now, what else would you like to eat, Lisa?

婷婷：莉萨，你还想吃点别的什么？

Lisa: I’m really hungry for some pork.

莉萨：我特别想吃猪肉。

Tingting: Well, then you should have the red braised pork.

婷婷：那你可以尝尝红烧肉。

It’s the most famous Hunan dish.

这是最有名的湖南菜。

Anna: Why is that?

安娜：为什么它这么出名？

Tingting: Well, Chairman Mao was from Hunan, and this was his favourite food.

婷婷：毛主席是湖南人，这是他最爱吃的菜。

Anna: Oh, that’s interesting. Let’s have that then.

安娜：噢，有意思。那我们点一份。

Tingting: So, we’re ready to order? Waitress!

婷婷：好了，我们可以点菜了吗？服务员！
